Ova nesuđena profesorica u kuhinji se motala još kao mala, da bi nakon diplome koje se zapravo nikada nije latila i posla na kojem nije bila zadovoljna, konačno pokrenula Zalogajčić, catering za sve one koji vole ukusan, ali i zdrav finger food. Krajnje je vrijeme da zaboravite ustaljene catering koncepte i dosadne uobičajene plate te posegnete za tradicionalnom mediteranskom kuhinjom s modernim twistom, učinjenom od dva glavna sastojka za dobar obrok: namirnica iz ekološkog uzgoja i velike ljubavi! Dopustite mi da vam predstavim Marijanu Kuduz, čija je hrana, a to ću posvjedočiti i sama jer moj život više nije isti nakon njen slanih muffina, doza čiste sreće.
Fashionbabica:Draga tko si ti?
Marijana:Ja sam Marijana Kuduz, lavica u horoskopu, rođena Splićanka, ali u Zagrebu već 16 godina pa ga smatram svojim drugim domom. Profesorica sam geografije i povijesti, ali nikad nisam radila u svojoj struci. Možda zato što me život vodio u jednom sasvim drugom smjeru.
Fashionbabica: Što je Zalogajčić?
Marijana:Zalogajčić je zapravo proizašao iz brojnih druženja, tuluma i večera koje sam organizirala za svoje prijatelje. Uvijek kad bi se skupila ekipa, radila sam neku hranu, tako da nikad nije bilo običnih zabava kod nas. Uglavnom su to bila prava mala gastronomska slavlja. Tada sam shvatila da ljude usrećuje moja hrana i da to želim stalno raditi. A kad sam još shvatila da bih se mogla udružiti s prijateljicom Suzi Jurišević koja ima eko vrt i uzgaja predivno povrće, voće i začinsko bilje u Prečkom, rodio se Zalogajčić. Zasad funkcionira na Facebooku kao catering i subotom izlažemo zalogaje u sklopu eko placa na Vrbanima, u prostorima udruge Vestigium.
Fashionbabica:Što sve Zalogajčić nudi?
Marijana:Zalogajčić u svojoj ponudi ima slane i slatke zalogaje. Tu su razne pite, pogače, tartovi, peciva, kiflice, muffini. Moram istaknuti da su sirovine iz ekološkog uzgoja, ono što same uzgojimo, a neke stvari nabavljamo od lokalnih OPG-ova. Kombiniram našu mediteransku kuhinju, koja je po meni jedna od najboljih na svijetu sa malo francuskog utjecaja što se može vidjeti u raznim tartovima.

Fashionbabica:Kome bi Zalogajčić mogao biti zanimljiv?
Marijana:Zalogajčić bi mogao biti zanimljiv svima koji su otvoreni za nešto novo, drugačije, ali i zdravije. Ako na vašem stolu, na zabavi, slavlju, tulumu ne želite imati uvijek iste plate sa sirom i šunkom ili mini hrenovkama, onda je Zalogajčić pravi izbor za vas. Usto je još i jako zdrav pa da ne bude da samo pazi na fizički izgled :) Meni je bitna prezentacija, ali i kvaliteta.
Fashionbabica:Odakle crpiš inspiraciju za svoje zalogajčiće?
Marijana:Inspiracija mi dolazi iz svakodnevnog života, od ljudi, situacija, knjiga. Ponekad samo vidim neku namirnicu i točno znam što bih od nje napravila u pećnici.
Fashionbabica:Imaš li uzore u vidu poznatih svjetskih kuhara?
Marijana:Moja mama je prva osoba koja me uvela u kuhinju. Uvijek sam kao mala bila njen glavni pomoćnik i uživala u tome. Zahvalna sam joj za to vrijeme i neke temelje koji su tadpostavljeni. Poslije sam krenula svojim, manje tradicionalnim putem. Inspiriraju me i naši kuhari iz Makronove koji uvijek sa zdravim, neobičnim namirnicama, naprave zanimljive i fine obroke. U zadnje vrijeme me oduševljava francuski chef Michel Roux, majstor za slane i slatke francuske slastice.
Fashionbabica: Omiljene namirnice koje voliš koristiti u svojim jelima su...?
Marijana:Omiljene namirnice bez kojih ne mogu zamisliti kuhanje su mi : poriluk, blitva, rajčica, heljda, tuna, đumbir, kardamom, cimet, ružmarin, origano, bosiljak i definitivno eliksir života : maslinovo ulje.
Fashionbabica: Jelo bez kojeg ne možeš je...?
Marijana:Ima puno jela koje obožavam, ali šalša, pizza, moja splitska pogača i varivo od slanutka i shitake gljiva su mi jedna od omiljenih.
Fashionbabica:Koje jelo je tvoj apsolutni hit?
Marijana:Slani muffini od poriluka i 3 vrste sira su mi hit proizvod. Mnogi koji nikad nisu voljeli poriluk, u ovim malim zalogajima su ga poprilično zavoljeli i na to sam ponosna. U zadnje vrijeme sam najviše pohvala dobila i za splitsku pogaču koja je nekakva moja varijanta viške pogače.

Fashionbabica:Kako se nosiš s jelima koja ti ne uspiju? Dogodi li se to uopće?
Marijana:Moram priznat da mi se rijetko desi da mi ne uspije jelo, ipak imam već dosta godina prakse iza sebe, ali kad se desi, nikad nije potpuno za bacit. Pojede se što se može pojest i idem dalje u nove pobjede.
Fashionbabica:Kakav je osjećaj pripremati hranu za druge?
Marijana:Pripremati hranu za druge je divno i zato sam i pokrenula Zalogajčić. Sretna sam dok kuham, a mislim da se to osjeti i u hrani koju pripremam jer tako dajem dio sebe. To je neopisiv osjećaj. Širiti ljubav hranom.

Fashionbabica: Kada si shvatila da je kuhanje ono čime se želiš baviti?
Marijana:Mislim da sam oduvijek znala duboko u sebi da to želim raditi, ali sam osvijestila tek prije par godina. Bila sam nezadovoljna, radila posao koji ne volim i odlučila nešto promijeniti. Obično tako u životu i bude, dođe nešto loše da bi nas probudilo iz zimskog sna i pogurnulo naprijed.
Fashionbabica: Kuhanje je za tebe strast, hobi, posao, život?
Marijana:Kuhanje je za mene ne samo posao već životna misija. Velika ljubav.
Fashionbabica:Jelo kojim bi svaka žena mogla osvojiti svakog muškarca je..? (ili muškarac ženu, žena ženu, muškarac muškarca)
Marijana:Jelo kojim biste mogli osvojiti svog partnera, ma tko on bio, je definitivno tart od čokolade sa kremom od karamele i lavande. Rastapa svako nepce.. Isprobano.
Fashionbabica: Budući planovi?
Marijana:Budući planovi su da nema prevelikih planova. Idemo dan po dan, korak po korak, znamo da se velike stvari ne događaju preko noći. I ja i moja prijateljica i kolegica vjerujemo u Zalogajčić, vjerujemo u sebe, da radimo pravu stvar jer volimo to što radimo. A to je najbolji recept za uspjeh.

This untried professor was fooling around the kitchen from a young age, and after getting her diploma that never actually had a role in her life and a job she was not happy with, she finally launched Zalogajčić (A Bite), a catering for all those who love tasty, but also healthy finger food. It is time to forget the established catering concepts and boring usual plates and reach for the traditional Mediterranean cuisine with a modern twist, made from two main ingredients for a good meal- ingredients from organic farming and great love! Allow me to introduce Marijana Kuduz to you, whose food, and I will testify myself because my life is not the same after her savory muffins, is a dose of pure luck.
Fashionbabica: Dear who are you?
Marijana: I am Marijana Kuduz, leo in the horoscope, born in Split, but living in Zagreb for 16 years so I consider it my second home. I am a teacher of geography and history, but I've never worked in my profession. Maybe because life took me in a completely different direction.
Fashionbabica:What's Zalogajčić (A Bite) ?
Marijana: Zalogajčić actually derived from a number of get-togethers, parties and dinners that I organized for my friends. I always made food when people would come over, so it has never been an ordinary party at our place. It was really a little gastronomic celebration. Then I realized that my food made people happy and I wanted to keep doing it. And when I realized that I could work with my friend Suzi Jurišević who has an eco garden and grows beautiful vegetables, fruits and herbs in Prečko neighbourhood, Zalogajčić was born. So far, it works as a Facebook page and catering and on Saturdays we offer snacks as part of an eco fair in Vrbani neighbourhood, in association with VESTIGIUM association.
Fashionbabica:What does Zalogajčić offer?
Marijana: Zalogajčić offers savory and sweet snacks. There are a variety of pies, cakes, tarts, pastries, croissants, muffins. I must point out that our ingredients come from organic farming, which we grow ourselves, and some things are purchased from local farms. I combine our Mediterranean cuisine, which is in my opinion one of the best in the world with a bit of French influence which can be seen in various tarts.

Fashionbabica:To whom could Zalogajčić be interesting?
Marijana:Zalogajčić could be interesting to all who are open to something new, different, and healthier. If at a party or a celebration you don't want to always have the same plate with cheese and ham or mini frankfurters on the table, then Zalogajčić is the right choice for you. It is also very healthy so it's not all about physical appearance. :) Presentation is very important to me, but quality also.
Fashionbabica:Where do you get inspiration for your snacks?
Marijana:My inspiration comes from everyday life, from people, things, books. Sometimes I just see an ingredient and I know exactly what I would do with it in the oven.
Fashionbabica: Do you have role models in the form of world famous chefs?
Marijana: My mom was the first person who introduced me to the kitchen. I was always her little chief assistant and enjoyed it. I am grateful to her for that time and some foundations that were placed back then. After that I went on my less traditional way. I am inspired by chefs from Makronova who always make interesting and tasty meals with their healthy, unusual ingredients. Recently I am thrilled by French chef Michel Roux, the master of savory and sweet French pastries.
Fashionbabica: Favorite ingredients that you love to use in your dishes are?
Marijana:Favorite ingredients without which I can not imagine cooking are: leeks, Swiss chard, tomatoes, buckwheat, tuna, ginger, cardamom, cinnamon, rosemary, oregano, basil and definitely the elixir of life: olive oil.
Fashionbabica:A meal you can not live without is?
Marijana:There are a lot of meals that I love, but tomato sauce, pizza, my Split bread and chickpea and shitake mushroom stew are one of my favorite.
Fashionbabica: Which meal is your absolute hit?
Marijana:Leek and cheese muffins are my hit product. Many who have never liked leek, got quite fond of it thanks to these small bites and I am proud of it. Recently I received the most praise for my Split cake which is my version of Vis cake.

Fashionbabica: How do you deal with meals that don't turn out right? Does it happen to you at all?
Marijana: I have to admit it rarely happens that I fail in preparing a meal, I do have a lot of years of practice behind me, but when that happens, it is never fully non-edible. You eat what you can eat and go on to new victories.
Fashionbabica:What's it like to prepare food for others?
Marijana:Preparing food for others is wonderful and that's why I launched Zalogajčić. I'm happy while I cook, and I think it can be felt in the food I prepare since I give a part of myself in it. It is an indescribable feeling spreading the love through food.

Fashionbabica: When did you realize that cooking is what you want to do?
Marijana: I think I always knew deep down I wanted to do it, but I realised it only a few years ago. I was unhappy, doing a job I didn't like and decided to make a change. Usually in life something bad has to come to awaken us from hibernation and push us forward.
Fashionbabica: Cooking is passion, hobby, job or a way of life to you?
Marijana: Cooking is not just a job for me, but my life's mission. Great love.
Fashionbabica:A meal any woman could win any man over with is ..? (or a man woman, a woman other woman, a man other man)
Marijana:A meal you could win your partner over with, whoever he/she is, is definitely chocolate tart with caramel cream and lavender. It dissolves every palate .. Tried.
Fashionbabica:Future plans?
Marijana:Future plans are that there are not many plans. We're going day by day, step by step, we know that great things do not happen overnight. Me and my friend and colleague believe in Zalogajčić, we believe in ourselves, and we believe that we are doing the right thing because we love what we do. And this is the best recipe for success.
